Esther’s Southern Fried Chicken
Need 2 ½ - 3 pound chicken fryer
Wash chicken Cut chicken Season chicken with salt and pepper Apply thin coating of flour Put chicken in plastic bag store in refrigerator overnight Next day apply another coating of flour to chicken Pre heat 2 ½ cups of Crisco oil in skillet, until oil begins to smoke Add chicken to skillet Cook till golden brown Serve with vegetables and potatoes
Esther’s Peach Cobbler
Make two 9in. Layers of piecrust from any piecrust mix and lay aside
Wash, peel and cut 8-10 peaches in quarters Put peaches into saucepan Mix ¾ cup of sugar and 2 teaspoons of cornstarch then add to peaches Add ½ teaspoon of nutmeg Add ½ teaspoon of cinnamon Add 1 teaspoon of vanilla flavoring Add 1 pinch of salt Cook on low, stir till thickens Lay first layer of crust on baking dish Add peaches Apply second layer of crust on top of peaches Pre-heat oven at 350 degrees for 10 minutes Bake pie for 45 minutes or until golden brown
